Well, I hate to be unoriginal, but I would be a writer too! Instead I toil away behind my desk at a law firm wondering when I'll have the courage to give it a go.
I would continue to do non profit work ...the only thing that wants me to change jobs is the HUGE debt I have compared to a small salary
I'd be paid to eat and write about food. Sometimes, I fantasize about opening up a bakery (or a bakery/bookstore/art gallery), but then (being the lawyer that I am) I start thinking about the realities of what it means to be baker, what with the 4 AM start time, etc., and I'm just not a morning person.
I'd probably still be an attorney, but my practice would change dramatically. It would be more part time, and I'd take on pro bono cases. I'd also dedicate more of my time to public service work like serving on boards for non-profits. I'd also run for a public office. In my spare time, I'd un-do learning how to write like a lawyer and try to write something original.
I would get my PhD in Anthropology and teach/research.
